The cuisine of the Republic of Venice reflects its cosmopolitan identity, shaped by centuries of trade and control over the Adriatic Sea. As a major hub for the spice trade, Venice played a key role in introducing European kitchens to exotic spices that became essential in Venetian cooking, adding complexity and richness to many dishes. As reflection of its prominence in global trade, Venetian cuisine became known for its bold and intricate flavors. The cuisine can be divided into three distinct categories based on the geography: the coast, the plains, and the mountains. This geographical diversity gives Venetian cuisine its rich variety, reflecting both the local landscape and cultural influences.
